If you've ever dined at The George at Burpham, you’ve likely tasted the signature house dressing that elevates some of our most beloved dishes. Today, we’re sharing the recipe so you can recreate that burst of flavour at home.


This house dressing—a tangy blend of wholegrain and Dijon mustards, cider vinegar, and extra virgin olive oil—is the secret behind our dressed leaves and slaw that compliments many of our classic dishes (think Côte de boeuf, Ploughmans, BBQ Brisket, and our classic pub favourite, the Cheeseburger). 


Whether you’re tossing it into a fresh salad or adding a kick to your coleslaw, it’s bound to become a household staple.



Ingredients


  • 83g wholegrain mustard

  • 58g Dijon mustard

  • 25g caster sugar

  • 83ml cider vinegar

  • 250ml extra virgin olive oil


This recipe will yield approximately 400ml of house dressing. In a cool dry place which can be stored for up to 6 months.



Instructions


  1. In a large bowl or food processor, combine the wholegrain mustard, Dijon mustard, caster sugar, and cider vinegar.

  2. Whisk together until the mixture is smooth and well-blended. You can use a balloon whisk for a hand-whisked texture or a food processor for a more even consistency.

  3. Slowly add the extra virgin olive oil to the mustard mixture, continuing to whisk as you pour. This will help emulsify the dressing, creating a smooth and creamy consistency.

  4. Once the oil is fully incorporated, your dressing is ready!
